Heat oil in a pan and saute onion for about 2minutes then add ginger and green chilli and stir fry the mixture..add salt,red pepper powder and stir..add chopped fenugreek leaves and cook for 5 minutes on medium heat by covering the lid..Add fried carrot and potato and give a good mix, slow down the flame and cook 5 minutes more by covering the lid.
  5. Add garam masala and stir well..heat off.

  7. Transfer in a serving plate or a bowl, decorate with carrot strip curl.
  8. Serve hot with chappati or lachha paratha.
